Biography

Cristiano Arantes Komiya's roots in the culinary world run deep. Born in Brasilia, he is the proud son of Ryozo Komiya, a pioneering chef who had the honor of cooking for Japanese royalty, including Emperor Akihito, Mitiko, and even Prince Naruhito. With such a rich culinary lineage, it's no surprise that Cristiano was destined for greatness in the kitchen.

His culinary journey began at the tender age of 12, assisting his father at the renowned Le Vieux Chalet, which specialized in French international cuisine, and at Koto, one of Brasília's first Japanese cuisine establishments. Today, Cristiano helms the New Koto and has brought to life the Izakaya Sakeyo, a bar/restaurant concept that was a cherished dream of his father.

Cristiano's approach to cooking is deeply rooted in traditional Japanese pedagogy. This method emphasizes the transfer of techniques, knowledge, and closely guarded secrets from one generation to the next. For Cristiano, this meant imbibing the noble art of Japanese cuisine directly from his father. And the results? Simply astounding.
