Biography

Born in Rio (carioca), Chen moved to Brasília at the tender age of 7. He's renowned for his audacious culinary ventures and was the proud owner of the contemporary BABEL from 2003 to 2011, which earned a star in the Guia 4 Rodas. His culinary journey has seen him grace the kitchens of globally acclaimed restaurants like the French MIRAZUR (currently ranked #1 on the 50 Best Restaurants list) and the Spanish MUGARITZ, boasting 2 Michelin stars.

Chen's expertise doesn't end there. He has also worked at OLYMPE, helmed by chefs Claude and Thomas Troisgros in Rio de Janeiro, and EÇA by chef Fréderic de Maeyer, also located in Rio. Adding another feather to his cap, Chen was responsible for the VIP lounge of Coca-Cola in the Olympic Park during the 2016 Olympics.

For iCook, Chen has meticulously crafted two menus, or rather, two culinary experiences inspired by his successful dishes from past ventures. The first, Babel XP, features the AranCHINO, a delightful shrimp-filled sushi rice ball, followed by a unique Carbonara de Missô and topped off with a ricotta cheesecake with red fruit compote, a recipe he's cherished for nearly two decades. The second, La Table XP, offers a tantalizing tuna tartare starter, a main course of ossobuco ragú wrapped in a crispy harumaki crust, and the same beloved cheesecake for dessert.
